Integrated into the Hôtel-musée Premières Nations in Wendake, La Traite restaurant is the ideal place to discover a cuisine inspired by the Indigenous terroir that brilliantly combines tradition and modernity, authenticity and gastronomic finesse. The menu highlights fresh and local products from hunting, gathering and fishing such as fish, game, forest mushrooms, spices, boreal infusions and wild fruits. The restaurant’s décor is also very elegant and elaborate, with traditional First Nations design elements combined with a modern aesthetic. The view of the Akiawenrahk River from the dining room adds to the relaxing and enjoyable dining experience. Chef Marc de Passorio is one of the most renowned chefs in international gastronomy. After working in various restaurants in France, Russia and New Zealand, Marc de Passorio settled in Quebec. Upon his arrival, Marc de Passorio wanted to learn more about Indigenous knowledge and visited several First Nations communities in Quebec while immersing himself in the customs and culinary traditions of the Huron-Wendat Nation, which welcomed him into its community. At the head of the restaurant La Traite, he pursues his passion and his role as mentor and trainer by favouring a natural cuisine inspired by the know-how and elements of the First Nations terroir while integrating First Nations youth into his brigade. Chef Marc de Passorio, two-time Michelin Star (2009 and 2015) and Gault et Millau d’Or (2014) “I like to think that the products speak for themselves. My role as a chef, as well as that of my brigade, is to make them travel to the rhythm of my journeys around the world, to associate them and to succeed in expressing their potential while preserving the values of the Indigenous peoples guided by the respect of nature.” – Chef Marc de Passorio

Revitalizing Indigenous culture, one meal at a time

In our traditional cultures, food is harvested, cooked, and eaten with respect. Gathering around a table is an act of community — it is about feeding the mind, body, and spirit at the same time, with food that is thoughtfully harvested and prepared.
